In soybean sample alkaloids, α -amino acid, carbohydrate, glycoside, flavonoid, organic acid, phenolic compound, reducing sugar, saponin and tanin were found to be present by phytochemical tests. Some nutritional values such as moisture (7.8 %), ash (3.9 %), fibre (10.0 %), fat (11.4 %), protein (34.1 %) and carbohydrate (32.8 %) in soybean sample were determined. The energy value was recorded as (273.8) kcal / 100 g. 20 g of soybean extracted with 200 cm3 of sodium hydroxide solution while adjusted the pH at 4.5 under vigorous stirring at room temperature provided the optimized yield of protein.
