In the preparation of virgin coconut oil, the coconut milk was fermented by varying fermentation time, fermentation temperature and amount of yeast (Saccharomyces cerevisiae). The maximum yield of virgin coconut oil with clear and nutty smell was obtained by fermentation using 1 g of yeast/L of coconut milk, 36 hr. fermentation time, 35ÂșC, fermentation temperature. Then the physio-chemical characteristic and free fatty acid composition of the virgin coconut was determined. In the preparation of body butter, the amount of prepared virgin coconut oil, the amount of beeswax and the amount of starch were varied to study their effect on the characteristics of body butter.
