Determination of Protein Content in Soybean Seed (Glycine MaxLinn.) Aye Mi Mi Htwe This research paper deals with preliminary phytochemical investigation, elemental analysis, determination of nutrient values and extraction of protein from soybean (Glycine max-Linn) seeds. In soybean sample alkaloids, α -amino acid, carbohydrate, glycoside, flavonoid, organic acid, phenolic compound, reducing sugar, saponin and tanin were found to be present by phytochemical tests. Some nutritional values such as moisture (7.8 %), ash (3.9 %), fibre (10.0 %), fat (11.4 %), protein (34.1 %) and carbohydrate (32.8 %) in soybean sample were determined. The energy value was recorded as (273.8) kcal / 100 g. 20 g of soybean extracted with 200 cm3 of sodium hydroxide solution while adjusted the pH at 4.5 under vigorous stirring at room temperature provided the optimized yield of protein.
